1 Cup of carrot juice
1 pound of tomatoes peeled and seeded and completely chopped
1 Tablespoon fresh lemon juice
4 stalks celery trimmed and sliced
4 scallions chopped
1/2 ounce fresh parsley
1 ounce fresh mint
Put carrot juice, tomatoes, and the lemon juice into your blender
Blend on low until all combined, put celery, scallions, parsley, mint, blend until smooth.
Pour into tall glasses, and serve garnish with a celery stalk.
