1/2 cup coconut milk
3/4 cup soy milk
1/2 cup pineapple juice
1 Tablespoon Brown Sugar
1 Ripe Mango Pitted and diced up
2 Tablespoons freshly grated coconut
6 Ounces pineapple chunks
1 Banana sliced and frozen (Slice banana place on parchment paper and freeze, then put in an airtight container for future use)
1. Put coconut milk, soy milk, pineapple juice brown sugar in a blender. Blend gently until combined.
2. Add the diced mango and grated coconut and blend well.
3. Add the pineapple chunks and frozen banana, blend until smooth
4. Pour the mixture into glasses, garnish with a bit of grated coconut and pineapple wedges.
